Banana Bread Recipe

LOCKDOWN BANANA LOAF RECIPE

I used to make Banana Bread/Cake or Muffins when the banana-lovers in my home were away or for some reason stopped eating them… in this new regime of ‘Staying Home’ I think taking a Banana and making it become so much more is pleasure for both the stomach and the mind.

This is my favourite , its the quickest and easiest as well as the most moist I’ve ever made, and in the spirit of ‘sustenance’ I added some chopped almonds, walnuts and pecans which have been sitting in the pantry awaiting an opportunity to be useful such as this.

2 eggs, beaten
½ cup canola oil
¼ White Sugar
½ cup Soft Brown Sugar
1 tsp vanilla essence
2 overripe bananas, mashed
2 Tbsp fresh milk
1 cup self raising flour
1 tsp baking powder

Chopped dried fruit and nuts of your choice and/or any tinned fruit.

Preheat the oven at 180⁰C and grease your loaf pan with some butter or line with baking paper.
Mix all the wet ingredients together in a bowl, including the bananas.
Then sift the flour and baking powder into the wet ingredients.
Mix with a wooden spoon until combined adding any extras you have chosen.

Pour the mixture in your cake or loaf tin

You can pop some tinned fruit of your choice into the top of the cake for extra moisture and taste.

Bake for about 1 hour.
